Mango and Jaggery - Maambhazam thokku

I simply cherish the season of mangoes. So many ways to treat this amazing fruit! Get to the nearest fruit vendor and grab some real big ripe mangoes so you can prepare this mouth watering recipe.

MANGO AND JAGGERY - MAAMBHAZHAM THOKKU















Ingredients:

  • 1 ripe mango
  • 1 onion medium sized finely chopped
  • 1 tomato medium sized finely chopped
  • 5 - 6 garlic pods
  • 1 1/2 tsp of chilli powder
  • 1 1/2 tsp of coriander powder
  • 4 -5 curry leaves
  • 1/2 cup jaggery
  • salt as needed
  • 11/2 cups water
  • 1/4 tsp mustard seeds
  • 2 tbsp oil
  • Chopped coriander for garnish
Method:
  • Heat oil in a pan, add mustard seeds and allow it to splutter on medium heat.
  • Toss in the onion, garlic and curry leaves. Saute well.
  • In the meantime chop the mangoes to the desired size.
  • Once the onions turn golden brown, add in the tomatoes. Fry till the raw smell goes away.
  • Now sprinkle the dry ingredients and pour in the water. Mix well.
  • Allow it to simmer so that all the ingredients come together and it looks thick.
  • Now add the jaggery and keep stirring till it melts and coats the super soft juicy mangoes.
  • Serve it hot, cold, spicy or sweet! This is fingers licking food!
