Vendakkai Thayir Pacchadi - Crunchy Okra Raita

Wondering what side dish to prepare for today? Try this amazingly simple recipe with fresh curd and ladies fingers. Of course like always, cooking is also a creative process, so bring in your own twist, you could also try using different vegetables to suit your palate.

VENDAKKAI PACCHADI - OKRA RAITA














Ingredients:

  • 150 gms of ladies fingers/ Okra (About 10 -12 small sized)
  • 1/2 tsp of mustard seeds/ kadugu
  • 1 tsp of uluntham paruppu/ urad dal
  • Pinch of perungayam/ asafoetida
  • 1/2 tsp Ginger paste
  • 6 tbsp of oil
  • 1 tbsp of chopped coriander
  • 6 - 7 curry leaves
  • 2 -3 dried red chillis (Guntur Milagai preferred)
  • 1 1/2 cup of fresh curd
  • Salt as needed

Method:

  • Rinse the ladies fingers/ Okra and pat dry. Dice them to thin bits.
  • Heat 5 tbsp of oil in a pan and fry the ladies finger till the stickiness goes away. We need to get some crunch into them.
  • Transfer them into a colander and set aside. 
  • Pour the curd in the serving bowl and season with salt as per taste and mix well till smooth.
  • Toss the crunchy ladies fingers into the curd and stir them in gently.
  • Heat 1 tbsp oil in a small pan/ karandi/tadka pan, to this add mustard seeds and uluntham paruppu/ urad dal. Wait till it splutters and turns gold. 
  • Now add dried red chillis, curry leaves, ginger paste and asafoetida. 
  • Toss this to the curd and mix gently. 
  • Garnish with coriander and enjoy it with what ever your heart desires - Plain rice, chappatis, parathas, pooris, bread toast, bisi bele bath....
