Vazhaithandu Poriyal - Banana Stem fry

When I think of this vegetable rather stem, I only bow humbly to the Goddess of Nature. It has such great properties, no wonder elephants don't get sick of kidney stones or anemia. Ingredients:

1 cup of finely chopped banana stem
1 onion finely chopped
4-5 curry leaves
1 tsp of thinly sliced ginger
1/4 tsp of tumeric
1/4 tsp of salt
1/4 tsp of chilli powder
1/2 tbsp of grated coconut
1/4 tsp of mustard seeds
2 tbsp of coconut oil

Method:

Heat oil in a pan. Add the mustard seems and allow it to splutter.
Toss in the onion, ginger and curry leaves. Saute till the onions are cooked well.
Add the turmeric, salt and chilli powder. Mix well.
Now toss in the banana stem. Pop the lid on. Let it cook on low heat. Stir every few minutes.
The banana stem should be soft and juicy. Now add the grated coconut and mix well.
Serve it hot with curd rice, sambar rice or roti.
