Get Pickled - Maavadu Oorugai

Summer is here spreading the aroma of lovely mangoes! Thought of sharing Mom's yummy Maavadu Oorugai recipe, which means pickle made from baby mangoes.The mangoes that fall off the mango trees before reaching their full term. Best part of this recipe is that it is OIL-FREE. I believe you can try this method for regular mangoes too. Do try and let us know what you think! 

MAAVADU OORUGAI



















Ingredients: 

  • 1 Kg baby mangoes/ maavadu
  • 1 1/2 cup of rock salt
  • 1 1/2 cup fresh red chilli powder 
  • 4 tsp fresh mustard seeds (powdered)
  • 2 tsp roasted fenugreek seeds (powdered)
  • 1/4 tsp asafoetida
  • 4 tsp sugar
  • 3 1/2 cups of boiled and cooled water

Pre-preparation time: 90 minutes

Method: 

  • Chop the mangoes, size as desired.
  • Add rock salt and mix well. Leave aside for 30 minutes.
  • Now add the fresh red chilli powder, mustard powder, fenugreek powder, asafoetida and sugar. Mix well.
  • Pour water and continue to mix until well combined.
  • Store in ceramic container or plastic container. Note: Mix once everyday for four days. 
  • Let the mangoes soak in the flavours for atleast ten days. 
  • Relish the pickle with curd rice or just about everything!!

Caution: 

  • Do not use wet spoon/ hand into the pickle containers
  • Do not leave the spoon in the containers.
