Puthandu Special - Paal Kesari

What a way to start the Tamil New Year - a year for Victory! Our home was filled with the tantalizing aroma of Paal Kesari, Vadai, Poli, Kurma and Idli this morning. On this auspicious day - we bring you the family recipe so sweet and soft. Happy feasting! 


PAAL KESARI













Ingredients:

  • 1 cup Rava
  • 1 cup Sugar
  • 1 cup Milk
  • 3 cups Water
  • 6 Tbsp Ghee
  • Cashews
  • Raisins
  • Pinch of orange/yellow food colour


Method:

  • Fry the cashews and raisins. Keep aside.
  • Dry roast the rava for 3 to 4 minutes. Saute frequently to avoid burning.
  • Heat the water and milk to a boil in a pan.
  • Slowly add the rava and mix frequently to combine.
  • Add the food colour
  • Once the rava is cooked to a semi-solid consistency add the sugar and mix well.
  • When the rava looks moist enough add ghee and stir. Paal kesari is ready.
  • Garnish with cashews and raisins.


Caution:

Do not let the rava cook for too long as it will make the dish very dry.
