Elaneer Payasam - Tender Coconut Delight

Who would have thought of this off-beat delight for Deepavali! Except my Amma :)

While working up those fiery crackers outside, Amma was busy in the kitchen cooking this tasty treat to cool us off! For all those with curious tastebuds, sharing this super packed healthy payasam with the core ingredient being the humble tender coconut, the amazing detox drupe for your tummy I've heard.

ELANEER PAYASAM - TENDER COCONUT PAYASAM















Ingredients:
  • 2 cups of Tender coconut flesh/ pulp
  • 1/2 cup sugar
  • 1 cup milk
  • 1/2 cup of water
  • 1 tbsp of cashewnuts
  • 1 tbsp of raisins
  • elakka/ elaichi powder
  • 1 tbsp ghee

Method:

  • Grind the flesh of the tender coconut to a smooth paste, add a little bit of water.
  • Run this through a filter to ensure there are no chunks. You will get an amazingly silky texture of the paste. Try not to make it runny. 
  • Now heat a pan on low heat and add this silky paste with 1/2 cup of water stirring gently every minute.
  • Add sugar and mix well it melts. Once it thickens take it off the stove and sprinkle elaichi. Set aside.
  • Roast the cashews and raisins in ghee. Add it to the payasam.
  • Once the payasam comes to room temparature, add the milk to it and fold it together. It is very important that the milk is also in room temperature. If not the texture will not be smooth.
  • Serve it chilled with Hot Hot Vazhapoo vadai.
