Karunai Kizhangu Varuval - Elephant Yam Roast

Irony of the taste and life! Not my favourite vegetable But my favourite dish :) Yes, some like Yam some hate it! Some are okay with whatever comes on their plate. Here's a catch too, did you know Yam is a good source of Vitamin C? It took me by surprise, apparently it also has anti-aging properties. There now I got your attention, let's get to the recipe :)

KARNAIKIZHANGU VARUVAL - YAM ROAST

Ingredients:

  • 10 slices of Karunai kizhangu or elephant yam
  • 1 1/2 tsp red chilli powder
  • 1 onion finely chopped
  • 1/2 tsp of mustard seeds
  • 2-3 crushed garlic cloves
  • 6-7 curry leaves
  • 2 tbsp of oil
  • salt as needed
  • 1 1/2 tbsp of tamarind paste
  • 1 cup of water
Method:

  1. In a wide wok, heat oil. Pop in the mustard seeds and allow it to splutter.
  2. Toss the onions, curry leaves and crushed garlic and saute till golden brown.
  3. Add the yam slices and mix with salt and red chilli powder.
  4. Pour water and cover with a lid and allow the yams to cook for 10 mins.
  5. Cook without the lid, allowing the water to evaporate. Add the tamarind paste and mix it gently with yams to coat. turn to low flame and stir occasionally. Check it it needs more salt or chilli powder to your taste and balance flavours.
  6. Keep going till it coats the yam and looks dry. 
  7. Serve it with curd rice or Thelivu sambar rice.
