Soup in a Bottle #5 - Easy Peasy Chicken Soup

Most of us in the kitchen today want it all to be done quick, clean and tasty. Thanks to Denis Papin, we have the pressure cooker that makes our life easy peasy in the pantry. I'm sure I heard a loud 'Amen' for that :)

Let's get to this simplest chicken soup ever!


















Ingredients:
  • 200 gms of chicken
  • pinch of turmeric
  • salt
  • butter
  • 2-3 garlic cloves
  • jeera powder
  • pepper powder
  • coriander leaves
  • 2 cups of water
Method:
  1. Take a pressure cooker, toss the chicken along with a pinch of turmeric and salt.
  2. Pour 2 cups of water and let it cook on low flame. I usually leave about 2 to 3 whistles.
  3. Strain the stock. keep aside.
  4. Chop the chicken to small pieces. 
  5. In a pan, heat butter. Add garlic cloves and coriander leaves. Pour the stock. Allow it to simmer on low flame for 10 minutes. 
  6. In the meantime prepare your chicken crisps for the soup. Heat butter or olive oil in a pan on low flame.
  7. Toss the chicken pieces, season with jeera, pepper, salt and mix well. Let it coat and become crisp. Cook on high flame. Usually takes about 2-3 minutes.
  8. Add these to the simmering broth and give a good stir. Turn off the flame.
  9. Serve it and Savour it.
