Brinjals are almost a staple vegetable in every home of Tamil nadu. This side dish is perfect for variety rice like puli saadam, curd rice, rasam and plain rice too. You will drool as it sizzles in the pot. Enjoy!

BRINJAL BITES - KATHIRIKKA THOKKU |
Ingredients:
- 1/2 kg brinjals
- 3 medium sized onions - finely chopped
- 3 medium sized tomatoes - finely chopped
- 7 - 8 crushed garlic pods
- 2 tsp chilli powder
- 2 tsp coriander powder
- 7 - 8 curry leaves
- 1/4 tsp turmeric powder
- 3 - 4 tbsp oil
- 1/2 tsp mustard seeds
- salt as needed
- 3 cups of water
- Coriander leaves finely chopped
Method:
- Chop the brinjals to long and thick slices.
- Heat oil in pan and add mustard seeds. Wait till it splutters.
- Saute onion, curry leaves and garlic till golden brown.
- Now add the tomatoes and fry till the raw smell goes away.
- Saute the brinjals with it. Sprinkle the dry ingredients.
- Add water and mix well. Place the lid on the pan.
- Allow it to cook for 20 minutes. Stirring occasionally to avoid burning.
- The thokku is ready when the brinjal is well cooked. Garnish with chopped coriander leaves.
Caution:
Chop the brinjals and put it in water so it does not change colour.
