ChillI Garlic Mango Jam

The season of yellow is almost coming to an end, making jams is one great way to continue enjoy the juicy sweet flavours of the mangoes. Give your toast some mango love...




















Ingredients:

  • 1 big ripe mango
  • 3/4 cup of sugar
  • 1 tsp of grated lemon rind
  • 1 tbsp of lemon juice
  • 1 tbsp of chopped ripe red chillis
  • 1 tbsp of chopped garlic
Method:

  1. Peel and scoop out the mango pulp. Run it in the blender to make a smooth puree. 
  2. Heat a non-stick pan. Add the mango, sugar, lemon juice and lemon rind. Give it a good stir.
  3. Note that the flame should be on medium and giving it a frequent mix. 
  4. In the meantime, dry roast the garlic and chillies in a pan and add to the bubbling jam.
  5. Keep mixing till it thickens enough to a jam like consistency. 
  6. Allow to cool and then refrigerate. It can last for up to 2 weeks in an airtight container. 
  7. Spread it on a warm toast to go with your hot cup of "anything" :)
