Thayir Saadam - Curd Rice

I'm sure this is one recipe all of us would have tried. But some how with few of these ingredients added to it makes it so cool to eat during the summer. When I say summer special it truly is with accompaniment of maavadu oorugai! 

CURD RICE - THAYIR SAADAM




















Ingredients:
  • 1 cup rice
  • 2 cups of fresh curd
  • 2 cups of milk
  • 1 1/2 cups of warm water
  • 3 - 4 dried red chillis
  • 1/4 tsp asafoetida
  • 1/4 tsp mustard seeds
  • 1 tsp uluntham paruppu
  • 1 tsp kadala paruppu
  • 10 curry leaves
  • 10 cashew nuts
  • salt as needed
  • 1 tbsp Oil
  • 1/2 tsp fresh ginger finely chopped
  • corainder leaves finely chopped 
Method:
  • Boil the rice. It needs to be very soft so you can easily mash it.
  • Add curd to the mashed rice and mix well followed by milk.
  • Mix well until well combined and then pour the warm water. This will ensure the rice does'nt become lumpy.
  • The consistency should be almost a semi-solid. 
  • Add salt as per taste and mix well.
  • Now for tempering, heat oil in a small pan. add mustard seeds wait till it splutters.
  • Then add the rest of ingredients. Mix it all well into the curd rice. 
  • Now you have the yummiest curd rice in a jiffy! Enjoy the summer!
