Picnic Special - Puli Saadam

This is a very popular picnic recipe in Tamil Nadu, I believe the reason being that it does not go bad even in the hottest of weather. Our picnics always include Puli Saadam and Kathirkka thokku or Goli uralagikizhangu varuval. Also many of us wonder what do to with left over rice or even on those lazy days where you don't want to indulge in elaborate cooking. Yes! This is the answer for a quick easy lazy treat.

PULI SAADAM















Ingredients:

  • 11/2 cups of boiled white rice
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp kadala paruppu (Split bengal gram)
  • 1 tsp ulunthum paruppu (urad dal)
  • 4 - 5 red chillis
  • 1/4 tsp asafoetida (perungayam)
  • 7 -8 curry leaves
  • 7 - 8 crushed garlic pods
  • 1/4 tsp of turmeric powder
  • Tamarind  soaked in little water (small lemon sized ball for measurement)
  • 1/2 cup water

Method:

  • Heat oil in pan. Add the mustard seeds, wait till it splutters.
  • Add the Kadala paruppu and uluntham paruppu till a light aroma fills the air.
  • Then add the chillis, curry leaves, asafoetida and crushed garlic pods.
  • Fry till the raw smell of the garlic goes away.
  • Squeeze the tamarind pulp in the water to make a thick paste. Filter the thick paste to drain the residue and use the pure pulp of the tamarind.
  • Pour this into the pan carefully and water. Season it with salt and turmeric powder. Mix for a few minutes.
  • Let it boil till it thickens. 
  • Ensure the boiled rice is at room temperature. Add the rice into the pan on low flame and mix well.
  • Picnic special puli saadam is ready! Don't forget to fry some papads :)
