The humble upma, I would also call it the Monday breakfast. So quick, so easy and so tasty. Go ahead and try this recipe with different vegetables that you prefer.

Ingredients:
- 1 cup rava
- 3 cups water
- 1/2 cup boiled peas
- 1 steamed carrot finely chopped
- 2 onions medium sized finely chopped
- 1 tomato medium sized finely chopped
- 1 tsp kadalai paruppu/ Bengal gram
- 1/4 tsp mustard seeds
- 4 tbsp oil
- 5 -6 curry leaves
- chopped coriander for garnish
- 6 -7 cashew nuts
- 1/2 tbsp ghee
- Salt as needed
- 1 or 2 slit green chillis (optional)
Method:
- Dry roast the rava and keep aside, just to release the aroma.
- Heat oil in pan, add the mustard seeds and wait for it to splutter.
- Then add the kadalai paruppu, onions, green chillis and curry leaves. Saute till golden brown.
- Toss the chopped tomato, carrot and peas. Mix well.
- Add 3 cups of water and then some salt.
- Once the water comes to a boil, stir in the rava slowly.
- Secure a lid to the pan for 10 - 15 minutes. Keep stirring intermittently.
- In the meantime, fry the cashew nuts in ghee and keep aside.
- Now check on the upma, it is ready if it is soft, moist and no lumps. The volume will look much thicker.
- Garnish with coriander and cashew nuts and serve it hot hot with your favourite chutney or simply some sugar!
