Salad Cooler - Cucumber, Carrots, Radish & Roast Almonds

Oh how I love the smell of fresh cucumber! While there were talks about which region in India is soaring hot, I was busy making this salad pot, cooling my inner self and worked perfectly well. Hope it does the same for you.

SUMMER SPECIAL - SALAD COOLER
















Ingredients

  • 1 cucumber
  • 1 carrot
  • 1 radish
  • 1/4 cup of roast almonds
  • 1/4 tsp of salt
  • 1/2 tsp of brown sugar
  • 1/2 tsp of lemon juice
  • 2 slit ripe red chilli
  • 1/4 cup of chopped coriander

Method

  • Using a peeler make thin strips of all the vegetables and toss them into a bowl.
  • Add all the other ingredients except almonds into the bowl. DO NOT MIX. Pop a lid and let it rest in the fridge for about 20 minutes.
  • Just before you are going to serve/eat, mix well and check for seasoning. You may want to add salt/ chilli based on your palate. 
  • Add in the almonds, if you don't enjoy big chunks you can finely chop them as well.
  • Serve with crunchy buttery toast or hot phulkas.
