Pumpkin Halwa - Pusanika Halwa

May this year be free of all ill-omen, only filled with prosperity and goodness.

Let us celebrate this year with a sweet treat made of the very bright and promising yellow pumpkin. One of the most celebrated vegetable during the harvest festival of Pongal. Not only does it hold a bag of nutrients but also considered very auspicious. Hence, used in many rituals.

This pumpkin came fresh from the Earth, it was so huge I had to think of a way to make something that would last us a few days. Just delicious! Can't wait for you to try it.



Ingredients:

1 cup grated pumpkin
1 cup sugar
1-2 elaichi pods
2 tbsp of milk
6 tbsp of ghee
3-4 strands of saffron
1 tbsp chopped cashews
1 tbsp raisins
1/2 tbsp of almond flakes for garnish

Method:

1. Soak the saffron in the milk for about 30 minutes.
2. Heat 2 tbsp of ghee in a wide pan.
3. Toss in the pumpkin along with the elaichis and saute for 5-6 minutes. Pop a lid on and leave to cook on low heat.
4. Keep checking every few minutes, it should not burn. Once the pumpkin releases water and cooked to a soft texture, add the sugar and mix well.
5. Pop the lid on and cook further on low heat. In the meantime roast the chopped nuts and raisins in ghee.
6. Stir the halwa, you will see it all come together. Add 2 tbsp of ghee, roast nuts and raisins.
7. Serve hot with vanilla ice cream.
