Soup in a bottle #4 - Princess Snow White

Sharing my little one's favourite princess soup, yes! that's exactly what I said 'Princess Snow White', it works like a charm. If one can have a dragon soup, why not princess soup. It has the magic of almond, goodness of Bottle gourd, sweetness of white onions and hint of mint for the aroma all fit for a princess.

I dedicate this soup to all parents and children who enjoy the imaginary world of fairytales :)
























 Ingredients:
  • 1 cup of chopped Bottle gourd
  • 1/2 cup of white onions
  • 6-7 almonds
  • 2 cups of water
  • 1/2 tsp of peppercorns
  • 2 garlic cloves
  • Few mint leaves
  • 1 tbsp of butter (unsalted)

Method:
  1. Heat butter in a pan, add peppercorns and crushed garlic. saute for a few minutes. Don't let the butter burn.
  2. Add onions and bottle gourd. Let it cook on low flame.
  3. In the meantime blanch the almonds, peel the skin and pop them into the pan.
  4. Pour water and cook for about 10 minutes.
  5. Let it cool. Strain in a colader and pour cold water over it. Don't dispose the broth.
  6. Blend them all to smooth puree and add it to the broth. 
  7. Heat it up gently, add the mint leaves and salt. If you need more spice to it, add crushed pepper.
  8. Heigh-Ho Heigh Ho the soup is ready to go!
