Kadal Kori - Sea Bite

With Summer Sizzling it's way and Mangoes dazzling with its shiny green skin - Who can resist the call of the tingling tongues.

This dish is so promising you will not stop thanking god for the seafood. This is one of the most creative dishes I have ever tasted and more than delighted to share it with you.


KADAL KORI - SEA BITE














Ingredients

  1. 250 gms of white prawns (devein)
  2. 1/2 tsp of turmeric powder
  3. 1/2 tsp of garlic powder
  4. 1/4 tsp of pepper powder
  5. 1/4 tsp of chilli powder (optional)
  6. 1/2 tsp of salt (as needed)
  7. 1 tsp of lemon juice
  8. 1 tsp tomato ketchup
  9. 12 - 14 spinach leaves
  10. 1/2 cup grated green mango (ottu maanga/ kili maanga/thothapuri)
  11. 1 tbsp of salted butter
  12. 1 cup of hot water


Method:

  • Mix the first 7 ingredients in an large bowl and marinate for 1/2 an hour. 
  • In the meantime, wash the spinach leaves in hot water and lay them on a clean flat surface.
  • On a grill pan/ tawa, heat butter and toss the prawns. Let it fry on medium flame for about 5 - 7 minutes. 
  • Then add the ketchup and mix well. Keep on high flame and saute till it sticks to the prawns. 
  • Sprinkle mango on each leave and top neatly with one prawn. Fold, wrap and pop one in your mouth.
  • You can also use toothpicks to bind them together and serve hot with chilled drink.
