Sweet potato and Apple squares

As the summer dawned upon us, all we could think about was a cold drink and a delicious snack to go with it. It was indeed a very hot day and a "warmer than usual" evening that called for this sweet-spicy Sweet Potato and Apple squares with Cucumber and mint juice. Here is the recipe for you to try the same.


Ingredients:
  • 3/4 cup - breadcrumbs
  • 3/4 cup - rice flour
  • 3/4 cup - sweet potato (boiled and mashed)
  • 1 cup - grated red apple
  • 1/4 tsp of turmeric
  • 1/2 tsp of salt
  • 1 tsp of red chilli powder
  • 1 tbsp of chopped coriander
  • 1 tsp of garam masala
  • 1 tsp of ginger-garlic paste
  • 1/2 cup of Olive oil (As needed to pan fry)

Garnish seasoning:
  • 2-2 finely chopped green chillies
  • 2 tbsp of dark soya sauce
  • 2 tbsp of finely chopped garlic 
  • 1 tbsp of toasted sesame seeds
  • 1/2 tbsp of lemon juice
  • 2 tbsp of olive oil

Method:

1. In a large bowl mix the breadcrumbs and rice flour together.
2. Add the remaining dry ingredients - turmeric, salt, chilli powder and garam masala.
3. Toss in the apple and sweet potato along with coriander and ginger garlic paste.
4. knead gently, firm enough to make a ball.
5. Take a scoop of it and press it gently with your hands. flatten the corners so they look like squares.
6. Heat a heavy bottom pan on low heat. Grease the pan.
7. Place the squares on the pan, drizzle the little oil.
8. Flip the squares after 1-2 mins or till golden crown.
9. Once it is crispy on both sides, place it on the serving dish.
10. For the garnish, heat oil in a small pan. Add garlic, green chillies and soya sauce, allow it to combine well.
11. Take away the pan from the heat, add lemon juice and sesame seeds. Stir them well and pour on the Sweet Potato and Apple Squares.
12. Serve hot with your favourite cold drink. Perfect for a summer party!
