Soup in a Bottle #1 - Roast pepper and carrot

Ingredients:

  • 1 yellow bell pepper
  • 1 carrot
  • 1 tomato
  • 1/2 onion
  • 1-2 garlic pods
  • 2 cups of water
  • 1/4 inch of ginger (optional)
  • 1/4 tsp of lemon juice (optional)
  • 1 tbsp of butter/ olive oil
  • pinch of sugar
  • 1/4 tsp salt
  • pinch of white pepper

Method:
  1. Roughly chop all the vegetables. In a wide pan add the butter and melt at low flame.
  2. Toss the garlic and ginger, wait till the aroma is released.
  3. Add all the vegetables. saute for about 7-8 minutes.
  4. Pour in the water, add salt as required. I'd put 1/4 tsp of salt.
  5. Pop the lid and allow to cook for about 10 minutes, till the vegetables are soft.
  6. Strain the vegetables, keep the stock aside. Run cold water over the vegetables and puree them with a little stock if needed.
  7. Now pass through strainer for any chunks or skin to separate.
  8. Add the puree to the stock. Keep for 2 mins over medium flame. season with sugar, pepper and lemon.
  9. Serve it warm in a bottle with lemon wedge and breadsticks.
