Here's my version of "Soup in a Bottle" series, It's the best way to ensure all the goodness reaches your blood. While you are busy pushing your child to build a healthy reading habit do think about building a soupy habit! It goes a long way, your children will thank you at my age. :)

Soup in a Bottle #1 - Roast pepper and carrot |
Ingredients:
- 1 yellow bell pepper
- 1 carrot
- 1 tomato
- 1/2 onion
- 1-2 garlic pods
- 2 cups of water
- 1/4 inch of ginger (optional)
- 1/4 tsp of lemon juice (optional)
- 1 tbsp of butter/ olive oil
- pinch of sugar
- 1/4 tsp salt
- pinch of white pepper
Method:
- Roughly chop all the vegetables. In a wide pan add the butter and melt at low flame.
- Toss the garlic and ginger, wait till the aroma is released.
- Add all the vegetables. saute for about 7-8 minutes.
- Pour in the water, add salt as required. I'd put 1/4 tsp of salt.
- Pop the lid and allow to cook for about 10 minutes, till the vegetables are soft.
- Strain the vegetables, keep the stock aside. Run cold water over the vegetables and puree them with a little stock if needed.
- Now pass through strainer for any chunks or skin to separate.
- Add the puree to the stock. Keep for 2 mins over medium flame. season with sugar, pepper and lemon.
- Serve it warm in a bottle with lemon wedge and breadsticks.
