Mango Rice - Maanga Saadam

April and May blesses us with fresh Mangoes, Melons and more to relish. How the Aroma of Summer Breeze brings back found memories of eating raw mangoes with salt and chilli powder.

One sunny bright morning I held a raw mango in my hand and quickly my mom grabbed it and said that's for making 'Maanga Saadam', I was a little disappointed because my wish was to crush them with salt and chilli powder. And so I waited patiently for the plate to appear. This is what happened in the kitchen in less that 15 minutes...and soon had another memory to my happy bag.

MANGO RICE














Ingredients:
  • 2 cups of rice (boiled and cooled)
  • 1/2 cup of grated raw mango (ottu/ kili mooku variety)
  • 3 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp bengal gram
  • 1 tsp urad dal
  • 4 red chillis/ green chillis
  • 1/4 tsp turmeric
  • 1/4 tsp asafoetida
  • 5-6 curry leaves
  • 1 tsp salt (as needed)
  • 1 tbsp chopped coriander (garnish)
Method:
  • In a deep pan, heat oil. Add the mustard seeds, urad dal and bengal gram. Allow it to splutter.
  • Then quickly add the asafoetida, curry leaves and dried red chillis or green chillis. Careful not to burn the ingredients.
  • Add the grated mango, season with turmeric and salt. Cook till the oil comes to the sides of the pan. 
  • Gently fold in the rice such that the mango masala has evenly flavoured the rice. Check the seasoning and more salt if needed.
  • Transfer to a serving dish and garnish with fresh coriander.
