Carrot Kuzhi Paniyaram

I'm so happy to be back to pen down and share Amma's recipes. Here's to all our eager friends and fans who have been waiting to whisk magic in the kitchen.

Be it kids or grown ups there are days you just don't want to chew!! For me that's very often :D and this recipe works wonders on your palate. 

CARROT KUZHI PANIYARAM















Ingredients:

  • 2 finely grated carrots
  • 2 finely chopped onions
  • 1 tbsp finely chopped green chilies
  • 2-3 curry leaves
  • 2 tbsp finely chopped coriander leaves
  • 2 - 3 tbsp vegetable oil
  • salt to season
  • 500 ml Idli batter

Method:

  • Let's start with making the carrot masala to flavour the batter. In a pan, heat oil on medium flame, Toss in the onions, green chilies, curry leaves and saute till the onions turn golden brown.
  • Now mix in the grated carrot and saute for 5 minutes.
  • Sprinkle the chopped coriander and salt. Mix well and then turn off the stove.
  • Add this to the idli batter and mix well.
  • For this, very obviously you will need a kuzhi paniyaram kadai/ pan. We use a non-stick so we consume less oil.
  • Coat the kuzhis/ grooves with oil or ghee. Heat on medium flame.
  • Scoop out the idli batter in a small ladle and pour into each kuzhi/ groove gently.
  • It does need a little skill to flip these delicate darlings but don't fret! it will be worth it when you pop this in your mouth :)
  • Use a sleek wooden knife or a fork will do too. Flick the sides to check if they are golden brown.
  • Then flip it over and let it evenly cook. 
  • Slowly pick them out and secure them in a hot case.
  • Make chutney for the dip and relish away!
