Vazhaipoo Vadai - Banana blossom

Sundays call for leisure cooking! And so take time and make this wonderful crispy Vazhaipoo Vadais for a chill evening accompanied with steaming cup of flavorsome Masala Tea.

VAZHAIPOO VADAI















Ingredients:

  • 1 1/2 cup kadala paruppu/ bengal gram
  • 1 1/2 cup toor dal
  • 1 1/2 vazhaipoo/ banana blossom
  • 3 - 4 green chillis 
  • 1 1/2 onions finely chopped
  • 1/2 ginger garlic paste
  • 1/2 cup curry leaves finely chopped
  • 1/2 cup pudina leaves finely chopped
  • 1/2 cup coriander leaves finely chopped
  • Oil to deep fry
  • Water
  • 1 tsp of rock salt or as needed

Method:

  • Soak kadalai paruppu and toor dal for about 2 hours in water.
  • Remove the reddish leaves from the banana blossom, gather all the small white flowers.
  • It's very important to remove the single petal and the stamen entirely from the base from each flower. Yes! needs patience but the best time to gather your friends, kids or family to help you and jabber away while you do this.
  • In a blender, crush the green chillis and rock salt.
  • Then strain the water from the soaked dal, put it in the blender. Grind the mixture to a coarse texture.
  • Now add this to a large bowl, mix in the vazhaipoo, onion, ginger-garlic paste, coriander, pudina and curry leaves.
  • Heat oil in a deep pan on high flame. Do not let it burn or smoke.
  • In the meantime, coat a little water on a banana leaf or a plastic sheet. Place a ball of the mixture and flatten it gently to a medium thickness.
  • Now drop it from the side of the deep pan into the oil very very carefully. Repeat this for as many vadais you would like to make.
  • Allow it to cook on one side and flip over. Fry until golden brown.
  • With the help of a slotted ladle or commonly called Jelli karandi in tamil, remove the crispy vadais and place it on oil absorbent tissues. 
  • Serve the Vazhaipoo Vadais with Masala Tea and enjoy the sounds of the crunchies!


Note: While deep frying, the oil is at the right temperature, if the vadais float to the top once you drop them into the oil.
