Being summer many of us face this at home, so don't waste the calcium or calories! Of course here the recipe shows you how to curdle the milk deliberately :)

Ingredients:
- 1 ltr milk
- 1 cup sugar
- 1 cups water
- 1/4 tsp elaichi powder
- 4 - 5 drops of lemon juice
Method:
- Boil 500 ml of milk in a pan, add few drops of lemon juice. The milk will split, keep stirring continuously till the curdling is complete. Keep aside to cool.
- Now filter the curdled milk with a strainer or use muslin cloth to filter but remember to tie it tightly and hang it for a few hours.
- After draining all the whey, knead the milk curd and let it rest.
- Make sugar syrup by boiling water in a pan and adding 1/2 cup sugar. Stir frequently.
- When the syrup is done, it will stick between your fingers.
- Add kneaded milk curd into the boiling sugar syrup for 5 minutes.
- Strain the syrup from the milk curd.
- Boil the remaining milk and reduce to about 150 ml. Mix 1/2 cup sugar and stir till the sugar melts evenly.
- Add in the milk curd and elaichi powder. Mix gently for a few minutes.
- Get it off the stove and have it warm or chilled.
- If you like some crunch, pop in some roasted pistachios.
