Paal Mittaai - Easy Milk Sweet

It was a fine morning, I went into the kitchen to brew my tea. Alas! I saw the milk had curdled overnight. Then my mom said 'Don't cry over split milk'. When I got back from work she said guess what's for dessert? I was stumped - that curdled milk became the hero of this dish. Hence I fondly called it Paal mittaai meaning milk sweet. 

Being summer many of us face this at home, so don't waste the calcium or calories! Of course here the recipe shows you how to curdle the milk deliberately :)

PAAL MITTAI - MILK SWEET














Ingredients:

  • 1 ltr milk
  • 1 cup sugar 
  • 1  cups water
  • 1/4 tsp elaichi powder
  • 4 - 5 drops of lemon juice

Method:

  • Boil 500 ml of milk in a pan, add few drops of lemon juice. The milk will split, keep stirring continuously till the curdling is complete. Keep aside to cool.
  • Now filter the curdled milk with a strainer or use muslin cloth to filter but remember to tie it tightly and hang it for a few hours.
  • After draining all the whey, knead the milk curd and let it rest.
  • Make sugar syrup by boiling water in a pan and adding 1/2 cup sugar. Stir frequently.
  • When the syrup is done, it will stick between your fingers.
  • Add kneaded milk curd into the boiling sugar syrup for 5 minutes.
  • Strain the syrup from the milk curd. 
  • Boil the remaining milk and reduce to about 150 ml. Mix 1/2 cup sugar and stir till the sugar melts evenly. 
  • Add in the milk curd and  elaichi powder. Mix gently for a few minutes.
  • Get it off the stove and have it warm or chilled.
  • If you like some crunch, pop in some roasted pistachios.
