What is quick, easy and delish? Egg it is and with my mom's twist it only gets tastier. It is a tried and tested recipe. I simply love this South Indian delicacy that is a perfect accompaniment for rice, chappatis, pooris and dosas. Go ahead and give it a go!

Ingredients:
- 6 Boiled Eggs
- 4 Medium sized onions (finely chopped)
- 4 Medium sized tomatoes (chopped)
- 5 Curry Leaves
- 6 -8 Garlic cloves
- 1 tsp Ginger-garlic paste
- 1/4 tsp Turmeric
- 2 tsp Mutton Masala
- 1 1/2 tsp Salt or as per taste
- 1 1/2 tsp Chilli powder or as per taste
- 1 1/2 tsp Coriander powder
- 5 Tbsp Vegetable Oil
- 1 tsp Mustard seeds
- 11/2 cups of water
- Coriander leaves for garnish
Pre-preparation time: 10 - 15 minutes
Method:
- Coarsely grind the onions and then grind the tomatoes to a fine paste. Keep aside.
- Mash the garlic cloves.
- Heat oil in the pan. Add the mustard seeds, wait till it splutters.
- Add onion, garlic and curry leaves. Saute till golden brown.
- Add the tomato and ginger-garlic paste. Fry till the raw smell goes away.
- Now add all the dry ingredients. Mix well.
- Pour water and let it boil. Slit the eggs and add to it.
- You will now start to see the gravy thicken. Let it simmer for 10 minutes.
- Get the pan off the flame and garnish with chopped coriander leaves.
- Piping hot Muttai Varuval is ready!
