My experimentation with soup is endless and I'm glad most of the times it turns out that the bowl and the ladle is licked off clean. Here is a recipe rich in high fibre that comes from the beetroot and it is known to relax blood vessels.

- 1 cup of diced beetroot
- 1 cup of diced tomatoes
- 2 garlic cloves crushed
- 1/4 cup of diced onions
- 1/2 tsp of salt
- 1/2 tsp of pepper
- 1/2 tbsp of butter
- 1/2 tbsp of cream (optional)
- 2 cups of water
Method
- Heat butter in a pan, toss the garlic. Roast it for a few minutes.
- Add the onions, beetroot and tomatoes.
- Saute for 5 to 7 minutes on medium flame.
- Pour water and allow to simmer till the vegetables cook.
- Now turn off the flame. Strain and keep the stock.
- Blitz the vegetables in the blender till smooth.
- Mix the pulp to the stock. Season with salt and pepper.
- Garnish with cream (optional) and serve it piping hot.
