Beetroot and Tomato Soup

My experimentation with soup is endless and I'm glad most of the times it turns out that the bowl and the ladle is licked off clean. Here is a recipe rich in high fibre that comes from the beetroot and it is known to relax blood vessels.

Ingredients:

  • 1 cup of diced beetroot
  • 1 cup of diced tomatoes
  • 2 garlic cloves crushed
  • 1/4 cup of diced onions
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 tbsp of butter
  • 1/2 tbsp of cream (optional)
  • 2 cups of water




Method

  1. Heat butter in a pan, toss the garlic. Roast it for a few minutes.
  2. Add the onions, beetroot and tomatoes.
  3. Saute for 5 to 7 minutes on medium flame.
  4. Pour water and allow to simmer till the vegetables cook. 
  5. Now turn off the flame. Strain and keep the stock. 
  6. Blitz the vegetables in the blender till smooth.
  7. Mix the pulp to the stock. Season with salt and pepper. 
  8. Garnish with cream (optional) and serve it piping hot.
