Soup in a Bottle #2 - Green Dragon Spinach Soup

One way to convince children is through stories! I've tried let's have 'Green Dragon Soup' and some how works all the time. No need to say more, you will see an empty bowl. The rich emerald green of this soup takes me to the shires from Lord of the Rings :) hope this takes you places as well with every sip.
Ingredients:

  • 1 cup of spinach
  • 1/2 of coriander
  • 1/2 cup of green beans (tender)
  • 1/2 inch of ginger
  • 1 garlic clov
  • 1 tbsp of cream (optional)
  • 2 cups of water or vegetable stock
  • 1 tbsp of butter
  • salt to taste
  • sprinkle of pepper




Method:

  1. Roughly chop the spinach, coriander and beans.
  2. Heat the butter in a pan and toss ginger and garlic until the aroma is released.
  3. Toss the chopped vegetables and saute. Cook it for about 6-7 minutes and pour water.
  4. Allow it to simmer for 10 minutes. Strain to separate the stock and vegetables. Run cold water over it. 
  5. Puree the vegetables to a very smooth paste and add to the stock. You could strain the puree if need be.
  6. Put it back on low flame and let it gently heat up as you swivel the cream.
  7. Season with salt and pepper.
  8. Serve warm with cheese toast and taste a fairytale in your tongue.
