Cauliflower and capsicum fry

In Tamilnadu, it is a mandate to have a side dish with sambar rice, curd rice or rasam rice. Here's one of those recipes that gives a punch to any variety rice. Again a simple, humble and delicious!

CAULIFLOWER AND CAPSICUM FRY


Ingredients:

  • 1 cauliflower
  • 3 capsicums 
  • 1 onion medium sized finely chopped
  • 1 tomato medium sized finely chopped
  • 7 - 8 garlic pods
  • 5 -6 curry leaves
  • 1/4 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • 4 tbsp oil
  • 2 tsp chilli powder
  • 2 tsp coriander powder
  • salt as needed

Method:
  • Heat oil in a pan, add the mustard seeds wait till it splutters.
  • Toss in the onions, curry leaves and garlic pods and fry till golden brown.
  • In the meantime chop cauliflower into medium sized pieces and boil it separately. Cauliflower usually comes with free green worms and you don't want to eat them! This is the best way to get rid of it or any impurities :)
  • Roughly chop the capsicums.
  • Once the onions are golden brown, fry the tomatoes along with it.
  • Now add the capsicum and cauliflower. Saute for few mins.
  • Sprinkle the dry ingredients and mix well.
  • Keep stirring every few minutes for about 30 minutes to bring it to a golden roast. Ensure it is cooked on low flame.
  • Serve it hot and make it a tasty meal.
